Pasta is a pure plant-based food that provides slow-release energy as it is a complex carbohydrate. For this reason, high-level athletes base their diets on pasta.
Pasta is made from wheat and it is available in various shapes and sizes, like long thin strips, bows and shells.
Pasta is available as refined white or wholemeal varieties, pasta may be fresh or dried.
Fresh pasta usually is made using plain or ’00’ flour (from soft wheat), water and eggs, kneaded into a dough and then rolled and cut into the desired shape.
Dried pasta, is made from semolina, which is milled from grinding the grain of durum wheat and then mixed with water.
100 g of cooked pasta provides approximately 120 calories.
Note that most dry pasta expands by almost 2.5 times when cooked/boiled, so to get 250 g of cooked pasta, you need to put 100 g of dry pasta in the pot.
