Raw lettuce consists of 96% water, 3% carbohydrates and contains a negligible amount of protein.
100 gr. of lettuce (2.5 cups of 250 ml/cup) has only 12 – 14 calories and this is the main reason that makes it an ideal food for weight control or for slimming diets. It also increases the feeling of satiety and we feel fuller for longer.
There are many varieties of lettuce, some with light green leaves and others with dark green leaves (such as romaine or cos), which have a good content of vitamin A which functions as an antioxidant (it exists in the form of provitamin A, like beta-carotene). It contains lutein and zeaxanthin which also have antioxidant effects in the body.
Dark green varieties of lettuce also contain small amounts of calcium and iron.
Lettuce is also a very good source of vitamin K, which is essential for blood clotting, and small amounts of vitamin B and potassium.
