Foods and Uric Acid




Uric acid is a natural compound found in the human body that plays a role in regulating antioxidant and oxygen free radical levels. Uric acid is a byproduct of purine metabolism, which is excreted through the kidneys.

Elevated levels of uric acid can lead to a condition known as hyperuricemia, which is a risk factor for gout and, in the long term, the formation of kidney stones.

Most often, high levels of uric acid are the result of the kidneys not effectively excreting it.

Excess uric acid can cause the formation of tiny crystals of sodium urate (known as tophi), generally in the joints or surrounding tissues, such as in the toes, fingers, heels, forearms, elbows, and knees. Tophi cause discomfort and pain and if not treated properly, inflammation and possibly skin ulceration may occur, that is, destruction of the skin area and underlying tissues.

Increased uric acid occurs mainly in the following cases:

obesity, hyperlipidemia, hypertension, alcoholism, gout, renal failure, leukemia, lymphoma, polycythemia, polycystic kidney disease, psoriasis, Down syndrome, hypoparathyroidism, hemolytic anemia, after radiation or chemotherapy.

The following drugs cause an increase in uric acid:

nicotinic acid, diuretics, salicylates, diazoxide, epinephrine, norepinephrine, ethanol, cortisone and corticosteroids.


Proper nutrition helps manage uric acid in the body in those who suffer from gout or have high uric acid levels.

Foods in relation to their purine content are divided into 3 groups, high, medium and low.
1st Group (high purine content – PROHIBITED during an outbreak of the disease)

Liver, kidneys, brains, heart, pancreas, meat sauce and broths, meat products (sausage, ham, etc.), game meat, consommé, anchovies, sardines, mackerel, herring.
2nd Group (medium purine content – AVOID during an outbreak of the disease)

Chicken, turkey, duck, goose, shellfish, whole grains, lentils, beans, peas, spinach, asparagus, cauliflower, mushrooms, tomatoes.
3rd Group (low purine content – AVOID ONLY IF TOPHI IS PRESENT, otherwise allowed)

Eggs, milk, cheese, fruit, peanut butter, butter, peanuts, pasta, rice, corn, yeast, vegetable soups, sweets and pastries, coffee, tea, chocolate.

All alcoholic beverages help increase uric acid.

Strawberries and celery help eliminate uric acid from the body.
