Gluten is a protein found in wheat, rye and barley.
Any food made from wheat, barley or rye products contains gluten, some foods less and some more.
Many people are sensitive to gluten, that is, to all products that contain it, but they do not cause damage to the small intestine as they do to those with celiac disease.
Celiac disease is an autoimmune disorder of the small intestine with a hereditary predisposition.
People who suffer from celiac disease, when they consume food containing gluten, they experience diarrhea and severe abdominal pain.
This damage to the small intestine leads to malabsorption of nutrients such as fat, deficiency in vitamins and certain minerals and results in weight loss, impaired growth in children, anemia and osteoporosis.
The following foods DOES NOT contain gluten:
1. All vegetables
(unless they are in prepared foods with wheat or barley or rye flours, in which case they are likely to contain gluten)
2. All fruits
(unless they are in prepared foods with wheat or barley or rye flours, in which case they are likely to contain gluten)
3. All animal proteins without additives and without being processed (meat, fish, seafood, eggs, cheese, milk, yogurt, cheese)
(meat if breaded contains gluten, fish or seafood if fried with flour contains gluten, eggs if we make an omelet with flour now contain gluten, processed cheeses or coated cheeses contain additives that contain gluten to improve texture, taste and shelf life their)
4. All legumes
(if legumes are canned or processed they are likely to contain gluten)
5. All nuts
6. All fats, oils and olives
(olive oil, coconut oil, peanut butter, almond butter, butter, margarine)
7. Rice
8. Potatoes, sweet potatoes
9. Corn and cornmeal, popcorn
10. Chestnuts
11. Coffee
12. Tea
13. All alcoholic beverages except beer
14. Soft drinks
15. Sugar
16. Gelatin
17. Baking soda
Gluten can be found in foods that naturally shouldn’t be there because they are processed in the same facilities as foods that contain gluten.
Oats do not contain gluten, but because they are processed on the same production line that processes wheat, rye, and barley, they may contain gluten.
Pure, distilled whiskey is made from wheat or barley or rye but does not contain gluten due to the distillation process that removes it. However, it may contain gluten if they have added flavorings or other additives after the distillation process.
We should always check food labels to be sure that the food we are going to consume does not contain gluten.
