Potatoes contain starch but also the amino acid asparagine which is a precursor compound of acrylamide.
Frying potatoes at over 120 degrees Celsius converts asparagine to acrylamide.
French fries should be consumed very rarely to maintain our health.
Such compounds as acrylamide, as well as polycyclic aromatic hydrocarbons and heterocyclic amines found in burnt animal fats, accumulate in the body and act cumulatively, that is, “silently” and not directly on the body.
Potatoes and athletes
Potatoes are a very good choice of carbohydrates for athletes.
Potato salad with boiled potatoes and fresh olive oil along with the appropriate choice of protein such as eggs or lean chicken if combined with seasonal vegetables is a very nutritious complete meal, covering not only calorically but also qualitatively their energy needs before training but also in restoring the components that have been lost after a workout.
