Foods that increase histamine



Histamine is a substance that is mainly involved in the functions of the immune and central nervous systems. Histamine initiates an inflammatory reaction to alert the body’s immune system to a possible attack. This inflammatory reaction causes blood vessels to dilate in order for white blood cells to act faster against the infectious agent.

The accumulation of a large amount of histamine in the body causes itching, swelling, and a burning sensation. In the event of an allergy or anaphylaxis, histamine is produced in very large quantities to alert the immune system as quickly as possible. To reduce the large amount of histamine that has been produced and creates itching, swelling, and red spots (possibly all over the body), we take antihistamine medications. These drugs block the action of histamine.

However, there are also several foods that increase histamine.
The following foods SHOULD NOT BE CONSUMED when we have an active allergy or anything else that increases histamine in the body.

Vegetables: tomatoes, tomato sauces (and ketchup), eggplant, spinach, zucchini, any pickles.
Fruits: Oranges, grapefruit, lemons, cherries, grapes, apricots, avocados, raspberries, plums, blueberries, raisins, bananas, papaya, pineapple, strawberries.
Meat and fish (and seafood): Rabbit, any spiced meat, sausages, salami, smoked ham and cold cuts, bacon, all fish, shrimp, lobster, crab, shellfish.
Eggs, cheese and dairy: Eggs, processed cheeses, cheddar, roquefort, brie, camembert, feta, Romano, cottage, ricotta.
Nuts and legumes: All nuts and legumes.
Food additives/chewing gum: Tartrazine and other food colorings, benzoates and sulfites, yeast, chewing gum. Spices and condiments: Cinnamon, cloves, vinegar, chili powder, star anise, curry powder, nutmeg, soy sauce, mustard.
Alcoholic beverages: Beer, wine and all kinds of drinks. Drinks: Tea (and green), chocolate, cocoa, cola drinks.

Any food that you do not consume immediately after preparation should be placed in the refrigerator and if you want to consume it, heat it up and DO NOT leave it at room temperature to be consumed for e.g. dinner (from its preparation at noon).


Vitamin C and histamine

Large doses such as 2000 to 3000 mg vitamin C reduces histamine by 38%. Such large doses can only be consumed with a supplement.
Allowed natural sources of vitamin C: broccoli, melon, red peppers.
